Prepare your own Haneeth- spiced and slow roasted lamb that will melt in your mouth!
Ingredients: 8 lbs lamb meat (shoulder & neck), 10 garlic cloves, 2 tbsp of Haneeth spice blend, 2 large yellow onions, 1 T salt, 1 tsp montreal steak seasoning, 1/2 T paprika, 1 dried lemon, 1/2 tsp nutmeg, 1 T freshly grated ginger, 1 tsp garlic powder
Preparation:
1. Wash and strain the lamb.
2. In a large pot, add the prepared meat. Add freshly grated ginger, ground garlic and the Haneeth spice blend.
3.Continuously mix around with a large wooden spoon so all the meat pieces have an opportunity to start browning slightly. Moisture will release then dry out before you start to notice browning.
4. Halfway through the browning process, add salt, cumin, turmeric, garlic powder, coriander, black pepper, steak seasoning, paprika, and dried lemon. Continue mixing till brown.
5.Transfer meat to cast iron pot. Add 2 cups of water to the pot with onions and seasoning and use a wooden spoon to scrape off the flavor on the bottom and sides.
6.Pour water and all its contents over the meat.
7.Cover and bake in a 350F preheated oven for 3.5 hours or until the meat falls off the bone with a fork. Check frequently after the 3rd hour. The top layer of meat will get nicely brown.
8.Serve and garnish with fresh cilantro, limes and tomato.
